Buttermilk Pancakes with Mixed Berries

Ingredients

40g Unsalted Butter (Melted)
1 Egg
1 ½ Cups Buttermilk
1 Cup Self-Raising Flour
7 Tablespoons Castor Sugar
1 Teaspoon Bi-Carbonate of Soda
1 Cup of Mixed Berries (Blueberries, Raspberries and/or Strawberries)
250ml Thickened Cream
1 Teaspoon Vanilla Extract
2 Mandarins (Zest Only)
 

Optional Finishes:
Drizzle of Maple Syrup
1 Scoop of Ice Cream
 

Method

In a bowl, combine the egg, melted butter and buttermilk. Mix in the bi-carb soda, flour and 4 tablespoons of the sugar.

Fold through half the berries and place small ladle full of the mixture onto the preheated plate.

Cook for 2 minutes, when ready you will see small circles appear. Flip and cook until just browned.

Whisk together the cream, 3 tablespoons of the sugar, vanilla and mandarin zest.

Serve as a stack, with berries and Mandarin Cream in between.

Finally, scoop your ice cream and/or drizzle with syrup as you desire.
